The Square December 2011: Breakfast

Festive greetings my fellow readers

The festive month of Christmas brings me to one of the hotels outstanding restaurants “The Square”.

During the busy month I had worked what we call the “early” or “breakfast shift” which starts at 6:30 and ends at 15:00 in the afternoon. In the begin it was a little tough for me , main reason being is that I am not a morning person what so ever , so far me to get up at 5:30 and be at work at 6:30 was hectic. I managed to get through it though and my body is adjusting bit by bit.

For me my experience in The Square was really awesome. Working with the early morning breakfast team compared to working late was a lot different than I expected.
A breakfast shift is a more pressurizing one seeing that mosts of the guests that stay at the hotel have there breakfast included in there rate , therefore service is much busier because guests are not directly but rather indirectly paying for their meal.

At the Square we offer the guests a full buffet for breakfast: from a wide variety of pastries, cold meats, juices and so much more on offer. They also provide a La Carte menu for those guests who prefer not to eat from the buffet but to rather order straight off the menu. Guests also have the choose to either sit in the Square restaurant or to go and have breakfast on the outside patio (that patio being the one displayed in the picture above from Novembers experience).

Working the breakfast shift has been a great experience for me , got to learn about how the micros system worked according to breakfast an the different skills an attention to detail one needs. So thank you all to the breakfast team for allowing me to share in this experience , as we all know it will continue to grow me bigger an bigger in this industry.

The Garden Lounge November 2010

Well hello my fellow readers

(sorry for the long wait)

This month I place myself in a stunning venue called the garden lounge.
It is a restaurant / lounge bar , were guests can come , relax and dine in a fabulous furnished lounge with exotic view of the gardens and the back of table mountain , which one can either view from the inside of the lounge or out on the ever most famous patio area. (very popular for sunrise breakfasts and basking in the warm sun lunches)

During my time in the garden lounge I was only meant to work in the bar area for the entire month , but to me it seemed an entire month in the bar would be a bit to much.
So I asked permission from the manager to be able to work as a barman/waiter and I was granted m wish.

Barmen

Being a barmen in a hotel is quite different from being a barmen in a standard restaurant or an event.
The bar is completely stocked , from all your different types of: beers right down to our whiskeys and liqueurs. Requiring one to know where everything is kept.
So when you make a beverage you know where everything is and what it contains.
The reason why being a barmen in a hotel can differ from many other establishments because a barmen needs to be able to pick up and service tables too , when it becomes super busy. So in other words one needs to be able to be a jack of all trades.

Waiter

Being a waiter for me was not only a great experience gainer but I actually really enjoyed it. For me to be able to interact with guests and other people is my passion therefore being a waiter I could fill that glass of passion to the brim.
The other aspect of being a waiter is that it’s a very pressurizing and mind skill/ memory testing job. Being a waiter requires a lot of patience, self-control and stability. I consider it to be one of the world’s most stressful jobs because you constantly have to be on your feet and run around like a headless chicken for guests. One also needs a really good memory especially when you serving a big table or loads of tables. Trying to remember exactly what each table wants and expects. But on the whole, the road to becoming a successful waiter is: confidence, self-discipline and being able to handle pressure.

For me my experience in the garden lounge was a fun and awesome one. Thank you to every one of the staff members who helped me out and taught me the ropes.
As I have said time and time before it takes real special people who go out of their way an give part of their time to hand over a small piece of their knowledge.

Love you all

Banqueting / Conference Centre October 2010

Good Day my fellow hoteliers

The month of October has led me to this wonderful department called banqueting.

The term banqueting means the following:

Banqueting - eating an elaborate meal (often accompanied by entertainment

This is exactly what banqueting was like, “elaborate food and “some” entertainment”. I could name the banqueting department my emancipation and not in the since of being set free but rather being able to be trusted with ones work.
I required a lot of knowledge in my time in banqueting in the since of being able to see how differently the banqueting team at the hotel works compared to other events I have worked at for other companies and how all the different workers in the department vary from one each other , for me this was GREAT. The team I worked with taught me a lot with regards to how functions are set up and what all is required , I learned pretty quickly and in no time I could manage setting up a function with no questions with regards to “where is this and that”.

It has also taught me that one should appreciate every single event you attend because you don't realize how much work goes into preparing for that event until you actually physically do it yourself.

I really have enjoyed my time in banqueting it allowed me to express and display my skills and I don’t think, anyone could ask for a greater team than the one in banqueting. And yes “Robyn” no bad things mentioned because to me your department is not perfect but I can see you all reaching for that perfection. SO to all my fellow colleagues I will miss you but will see you all sometime next year.

AND REMEMBER TEAM =
T- TOGETHER
E- EVERYONE –
A – ACHIEVES –
M – MORE
AND NEVER FORGET THAT

Special Suprise revealed - MOYO Stellenbosch....

Well Hi there

here is the something special i was keeping from you.
The Moyo restaurant in Stellenbosch.

Moyo for me is probably my most "new" favourite place in Cape Town. I experienced this magnificent place on the July 2010. My original plan was not to go to Moyo (never thought it was anything that special) , my plan was just to go to Spier to view the cheetahs and the eagles. But little did i know a special someone surprised me with a fabulous dinner the MOYO restaurant. It was such a magical moment for me (one of the best i have ever had and will still have in my life). It started with some traditional African white face painting. I first had some tribal looking lines (which eventually after 3 hours dried and fell off). Then i had done some puppy foot prints , which i thought were really cute.

Then came time for food o wow what a variety (just by having a look at the above pictures you will see what i mean by a WIDEEEE VARIETYYY. Eventually after like 2 hours of eating (starter , mains , mains , mains and desserts) i was evntually full LOL. (yes i will agree that i ate like a pig but hey! it was mty first experience there , so i made the most of it.

The night then ended with good old african traditional music (drumming , shakers and tambourines) , it was such an awesome and romantic atmosphere (the best i have ever experienced).

So on a whole if i could give a rating to MOYO out of 10 - for everything
from the decor , food and atmosphere , i would give them 100000000000000000000000 because for me i have been to many restaurants but NOTHING WILL EVER COMPARE TO MY MOYO EXPERIENCE.

Some basic information about MOYO {please note the text below was taken from the MOYO website and is copyrighted}

Just outside Cape Town, in the heart of the winelands and surrounded by the magnificent mountains, moyo Stellenbosch awaits you. In a magical setting amidst the ancient oaks and colonial splendour of the historical Spier Estate, moyo offers a unique dining and retail experience that is elegantly African.

My last final Moments.... 7 Months later March - September 2010

Well hello my follow readers , it’s been a while since our last experience together.

This month has been quite something wow, reason being, it is my last month not only in reception but in front office. I have spent the past the last 7 months learning the ins and outs of front office and what exactly it expects from every single employee within its department.

Just to do I bit of re-capping of my 7 month journey

April – Laundry / Housekeeping / Marketing
May – Reservations
June – Guest relations, switchboard, travel desk
July – Reception
August – Reception / Marketing
September – Reception

My journey thus far down the lane of front office has been a great one, one of learning and gaining of great experience. I have learned so much not only about the work one has to do, but I have learned about my fellow colleagues and the “real” world has people call it. So I would like to thank every single department and department head for making every moment (well most moments special even though sometimes I just got driven up the wall LOL ) but on the whole I couldn't have asked for it any other way.

Housekeeping:

Ladies thank you, you all taught me a lot and really showed me the meaning of what hard work is.

Reservations:

To you I will always be grateful you were my first opera learning experience and took time out of your busy day and gave some to me.

Guest relations / switchboard and travel desk

Thanks to you all too, you really added great knowledge to my long journey ahead.

Reception

The biggest thank you to all. You have taught me more things in these past 3 months than I could have ever imagined. I will always be forever thankful to you all.

Lots of love

Reception Part TWO: 01 - 30 August 2010

Hello all , well as I am sure you can guess I am still in reception (Round two)

Wow where do I begin ? this month has been crazy as per normal (I guess in all hotels it is crazy) but the hotel I am currently at is always busy , well that is what one gets when you in a world renowned hotel.

Anyhow back to reception. I have learned a lot in this month, it is one of the very few departments in a hotel were one can learn so much. I have learned that one can move guest account to other rooms, today on 24.08.10 I learned how to split a bill (which I found really cool LOL (Laugh out loud). The only thing about this month and reception is that I have been working late shift upon late shift which is : 15:00 – 23:00 , which is great because I ca sleep late , but eventually it becomes to repetitive. Were a early shift: 06:45 – 15:15 is not that repetitive, reason been there is a lot more wok to do and you know the old story every guest is different.

I have had some downs during this past month but hey all of us have to pass the learning curve in life and yes it unfortunetly does bring with it both it's pros

There is a saying that goes something like this:

"I learned that good judgment comes from experience and that experience grows out of mistakes."

So yeah that was my part TWO in reception
Love you all
